CARDAMOM
Also pronounced <<cardamon>> this particular oil comes from thousands of years of use in Chinese and Indian medicine. This oil was once recommended by Hippocrates for coughs and abdominal pain. This herb is widely used as one of the favorite spices in India, Europe and Latin America. Throughout the Arab world, Cardamom is one of the most popular spices, with Cardamom coffee being a symbol of hospitality and prestige. The spice is also very popular in the Scandinavian countries where it is used more extensively than cinnamon. The dried ripe fruit and seeds are used in steam distillation to produce the essential oil.
ROSE
The centifolia Rose or May Rose is cultivated in France only in the Grasse region, at Fayence and Montauroux in the Var. This rosebush must be planted in an area which is neither too hot nor too dry. It needs about 700 to 900 mm of water annually with a summer dry season.
The Damas rose requires a favorable climate with moderate temperatures and humidity, in a well-ventilated soil not too rich in calcium salts. Flowers are treated by distillation and extraction. Only the damascena is used to obtain essential oils (4,000 kilos of flowers for 1 kilo of essence). Centifolia and Damascena are both extracted using volatile solvents. The output varies between 17% and 27% of concrete yielding 55% to 65% of absolute. High-temperature maceration in fat was used before. One mustn't forget however that the rose is the western world's most idealized flower.
PINK PEPPER
Pink pepper is the berry from the Schinus terebinthifolius, a South American tree. They are midly toxic. The only significant difference between white and black pepper is in starch and fiber content. The belief that white pepper is milder in flavour than black pepper does not seem to be confirmed by the scientists. However, there are some differences in pungency of black and white pepper due to geographical origin. Pepper can be washed and re-dried before grinding. Store away from sunlight at moderate temperatures and low humidity. Only ground pepper needs to be stored in sealed containers. Pepper loses more volatile oils the finer it is ground..
